Preheat oven to 375 degrees. Drizzle olive oil onto a jelly roll pan (may need a second pan.)
Slice cauliflower in half and cut out stem and leaves. Slice cauliflower into about ¼ inch thick slices (pieces will fall off.)
Place cauliflower slices and pieces in single layer on prepared jelly roll pan. Coat top w/ addl olive oil and season generously w/ salt.
Bake, turning once, until caramelized on edges and tender, 25 to 30 minutes.
Let cool 5 minutes before sprinkling w/ balsamic vinegar and serving.
