Barbecue Chicken & Veggie Casserole
Preheat oven to 375 and spray a 2 qt casserole dish generously w/ nonstick cooking spray.
Drain cannelloni beans.
Cook chicken thighs into 4 pieces.
In the prepared baking dish, mix chicken, barbecue sauce, baked beans, drained cannellini beans and baby carrots. Cover and bake for 1 hour, stirring once.
Uncover and stir in the green beans. Cook for another 25-30 minutes longer topping w/ shoestring potatoes for the last 10 minutes or until potatoes lightly browned.
