Preheat oven to 400 and spray a 9-inch glass pie plate with nonstick cooking spray.
In a large skillet, heat 1-2 tablespoons oil over med-high heat until oil hot. Cut cubes into small cubes before seasoning with salt and pepper. Add to skillet. Cook until chicken cooked through, about 5-8 minutes, stirring frequently.
Sprinkle cooked chicken and broccoli florets into bottom of the prepared pie plate.
In a small bowl, mix soup and milk. Pour over chicken and broccoli. Sprinkle top with cheese.
In another small bowl, melt butter in microwave (microwave at level 5 for 1-minute intervals until melted.) Mix in breadcrumbs and sprinkle on the top of cheese.
Bake for 20 minutes or until the chicken mixture is hot and bubbling.
