In a large skillet, heat oil over med-high heat. Place cutlets in pan and cook 1-2 minutes; flip and cook for an additional minute.

Meanwhile in small bowl whisk preserves w/ red wine.

Add wine sauce to pan with the pork cutlets and cook 1 -2 minutes or until reduced.

Serve cutlets drizzled w/ sauce.
