Preheat oven to 425.
Cut out cauliflower core and remove leaves. Cut head into ½ inch thick steaks (there will be pieces that fall off.)
Arrange steaks and cauliflower pieces on baking sheet in single layer. Drizzle with olive oil; season w/ salt and pepper. Flip cauliflower and repeat.
Roast in oven for 10 minutes. Flip each steak and shake cauliflower pieces.
Roast for another 10-15 minutes or until golden brown.
Sprinkle w/ parmesan cheese and let sit for 5 minutes or until cheese melted before serving.
