Preheat oven to 350 and spray a large loaf pan w/ nonstick cooking spray.
In a resealable gallon bag, add 3 cups of the tortilla chips. Seal and smash with a rolling pin (or heavy spoon) until crumbly. Continue smashing chips until you have 1 cup crushed chips.
In a large bowl, add chip crumbs. Mix in meat, cheese, onions and taco seasoning. Mix well.
In a separate small bowl, whisk eggs. Whisk in milk and taco sauce. Pour eggs-milk mix into meat. Mix well.
Press meat mixture into prepared loaf pan. Pour taco sauce in a strip down the middle of the top.
Bake for 45-60 minutes or until cooked through and browned on top.
Let rest 5 minutes before serving.
