Preheat oven to 425 and line a rimmed baking sheet w/ aluminum foil.

Toss cauliflower w/ 4 T oil. Spread out into single layer and sprinkle w/ salt and pepper.

Roast for 20-30 minutes, tossing occasionally.

Meanwhile, in a small bowl, whisk lemon juice, 2 T oil and pinches of salt and pepper.

Transfer cauliflower to a serving bowl before zesting about 1/2 of the lemon (about 1/2 teaspoon) on top of the cauliflower. Add lemon juice mixture and toss to coat.
