Spray a slow cooker w/ nonstick cooking spray and insert a slow cooker liner.
Cut apples into 8 wedges each. Set aside.
Cut about 8 slits into pork tenderloin. Slide apple wedges, cut side down, into the slits of the pork tenderloin (should be wedges left over.)
Lay half of the remaining apple slices into the bottom of the slow cooker. Drizzle ¼ C of the honey over apples and lay pork on top. Pour apple juice on top and sprinkle cinnamon over everything. Top with remaining apple wedges and drizzle remaining honey over top.
Cook on low for 8 hours.
Slice pork and serve pork topped with cooked apples and drizzled with sauce.
