Spray a slow cooker with nonstick cooking spray and insert slow cooker liner.
In a small bowl, mix cranberry sauce, Catalina dressing and soy sauce until well mixed.
Put pork in bottom of slow cooker and pour cranberry mixture over top.
Cover and cook on low 4 ½ to 5 ½ hours.
Remove meat and tent to keep warm.
Over a small saucepan, zest about 1/4 of the orange (need about 1 teaspoon zest.) Add in remaining liquid from slow cooker and orange juice.
Heat orange juice mixture over high heat and whisk in cornstarch or flour. Heat until thickened, about 3-4 minutes.
Slice pork and serve drizzled with sauce.
