Spray a slow cooker with nonstick cooking spray. Set aside.
Rub pork w/ oil; then season with salt and pepper.
Heat nonstick skillet over med-high heat. Brown pork on every side then transfer to slow cooker.
In a med bowl, mix beans, garlic and sage. Pour mixture around pork and cook on low heat setting for 7-8 hours.
Remove pork to a cutting board and let cool for a few minutes.
While pork cooling, drain the slow cooker mixture, reserving the liquid.
Return beans to a slow cooker and mash w/ wooden spoon or potato masher using
the reserved liquid until reaches desired consistency. Stir in parmesan cheese.
When done mashing bean mixture, shred or slice pork discarding any fat.
In a large bowl, mix honey and vinegar w/ whisk. Mix in pork and serve pork with mashed beans.
