Zest half the lemon over a medium bowl making about 1 teaspoon zest. Add garlic and spinach; mix well.

Create a pocket in each breast. Place hand on top of breast; insert the knife into the thickest part of the breast sliding fingers or knife to make each pocket larger.

Stuff pocket with 1/3rd of spinach mixture. Sprinkle with salt and pepper.

Heat olive oil in large skillet over med-high heat; add chicken.

Cook 3-4 minutes per side or until each side golden brown.

Add broth; cover and reduce heat, simmering until chicken cooked through (about 7-10 minutes.)

Remove chicken to serving platter and drizzle with pan juices.
