Preheat oven to 350 F and season chicken w/ salt and pepper.

Using the tip of a knife make a pocket in each of the chicken breasts (cut halfway the thickness of each breast using fingers or a knife to make the pocket larger while being careful not to cut through.)

Stuff each pocket w/ about 1/3 C of the spreadable cheese.

Wrap each piece of chicken w/ 2-3 slices of prosciutto covering entire breast. Brush w/ olive oil and season lightly w/ pepper.

In a large cast iron skillet (or other similarly sized oven-proof pan) add 1-2 T olive oil making sure bottom of pan covered. Add chicken breasts seam side down.

Scatter cherry tomatoes around the chicken breasts. Throw several springs of thyme and/or oregano if desired on top.

Bake about 30 minutes or until chicken cooked through and prosciutto edges crispy.
