Preheat oven to 350 and spray a baking dish with nonstick cooking spray. Set aside.
Prepare stuffing according to box directions.
Meanwhile, in a large skillet, heat oil over medium-high heat until oil hot. Season pork chops with salt and pepper and sear pork until well browned, about 4 minutes per side. Place pork in prepared baking dish.
Chop thyme and add to a small bowl. Mix in garlic and soup and spoon evenly over pork. Top with stuffing.
Bake uncovered for 30-45 minutes or until pork cooked through (can broil the last 5 minutes if like a bit of “crisp” to stuffing.)
